Chartreuse liqueur dates back to 1605, when monks at a monastery near Paris received a manuscript as a gift from a marshal of Henry IV. The document contained a recipe devised by an alchemist who possessed profound knowledge of herbs and the skill to process them into a beneficial remedy. After years spent deciphering the manuscript, the first practical formula for reproducing this "Elixir of Long Life" was devised in the early 18th century. To this day, the recipe is produced exclusively by the Chartreuse monks, who rely on the ancient manuscript to recreate what is now known as the *Élixir Végétal de la Grande-Chartreuse*. The secret recipe comprises 130 herbs that are macerated in high-quality alcohol and subsequently distilled. The spirit is then aged in oak casks for a minimum of three years in the atmospheric cellars of Voiron. Chartreuse Jaune is the sweeter counterpart to the famous Chartreuse Verte; it is now available with a higher alcohol content (43% ABV, up from the previous 40%), which enhances its aromatic profile. It can be enjoyed as an after-dinner digestif or served over ice. It is also excellent for use in cocktails.
