In 1976, Don Javier Sauza sold his two most modern distilleries to the giant Beam Suntory, while the third was excluded because it was considered technologically obsolete; indeed, this small distillery featured a steam-heated stone oven, an animal-drawn *tahona* for crushing the cooked agave, wooden fermentation vats, and a copper still with very limited capacity. In 1999, Guillermo Sauza—Don Javier’s grandson—decided to reopen what appeared to be a tequila-making museum frozen in the 1940s, setting out to craft his tequilas exactly as they were made back then. This Fortaleza *blanco* tequila is the "still-strength" version of the classic *blanco*, meaning it is not diluted after its double distillation in copper pot stills. Slightly more rustic on the nose, this vibrant tequila highlights notes of vegetal matter, olive, earth, and black pepper.
